Baking - Apple Snow

In the new house we have moved to we have a hugeeeee apple tree that literally has hundreds of apples on. We've been eating stewed apple quite a bit and when home along today I decided to make a nice pudding for me mum and dad and decided using some apples was probably a good idea. I knew we didn't have a lot of food in but had a couple of eggs so this was the perfect thing to make!

If you want to make it too here's how:
1) Peel and thinly slice cooking apples making sure you remove any bad bits. I did about five medium sized apples and this fed three people comfortably.

2) Put the apples on a low heat with a little water and some sugar just to take away the tartness a bit.

3) Cook the apples down for about fifteen to twenty minutes until they are soft.

4) Take the apples off the heat, blend them until smooth and leave to cool.

5) Crack two eggs and separate the whites and yokes. You don't need the yokes but if you're like me and don't like waste maybe try and find another use for them rather than throwing them away. Whisk the whites with a little sugar until when you hold it above your head it doesn't move..Or for the safer people until it holds a peak.

6) When the apple is cooled (this is important, if it's still warm you could scramble the eggs and that'd taste awful!) fold the egg whites into the apple and serve.

Don't forget to do the washing up!

TOP TIP: Don't do what I did and manage to trip and crack an egg against the side..It ends up looking like this.. and takes an age to clean!
